The Zymè Winery and Chef Cordella's Gazpacho.
Today I propose a Wine Cellar which is very dear to our Team of "La Veranda del Color": Zymè.
It is located in San Pietro in Cariano (VR) in the heart of Valpolicella Classica Region, one of the local wine-growing areas from which the most precious treasures come. Imagine green expanses of vineyards and the gentle ups and downs of the hills: right here we find the splendid Zymè winery, whose mission is to combine the traditional past with the future of innovation, just like our kitchen, our Gourmet restaurant, our environments.
Zymè: we were also fascinated by the name. In Greek it means 'yeast', a fundamental element in oenology but often also in the kitchen. In fact, this year Chef Fabio Cordella wanted to pamper the guests of “La Veranda del Color” with his bread made from mother yeast, left to rise for many hours and served warm, fragrant and fragrant.
One of the Gourmet dishes protagonists of this season at the Michelin-starred restaurant in Bardolino is certainly the 'Tomato Gazpacho, Avocado Cream, Marinated Vegetables with Spices, Macadamia Nuts'. A fresh, savory dish, which goes well with a soft and persistent wine such as 'From Black to White', one of the jewels that the Zymè winery offers.
I find 'From Black to White' particularly interesting because it is a white wine obtained for 60% from Rondinella Bianca, a grape obtained from the natural genetic mutation undergone by the Rondinella vine, from red grape to white grape. Zymè is one of the many wineries that I love to propose for my wine pairings at “La Veranda”.
