Who doesn’t love Risotto?
This typically Italian dish proves to be a challenge that requires dedication, patience and that tests the excellence of the cook. It has been exiting to create a Risotto to remember for the guests of “La Veranda del Color”, Gourmet restaurant in Bardolino awarded a Michelin star.
What I love to do is carefully choosing the ingredients coming from all over Italy and playing with them to add subtle contrasts to the dish, as happens in the Risotto Creamed with Jerusalem Artichoke, Sea Urchin, Lime and Nduja from La Veranda menu.
I wanted to tickle your palate combining the sweetness of the gerusalem artichoke with the tartness of the lime. Then the warm and spicy taste of the Nduja, a rich Calabrian specialty, reveals itself and meets the cold and sapid sea urchin ice cream… Just imagine what a surprise for your taste buds!
The ice cream is a very worthy part of the plate: it tells about my life experiences, my home land and it gives the sensation of holding the sea in your mouth...
To welcome all this tastes, I chose an element originating from the North of Italy: a kind of rice very much loved in the area of Verona.
Cooking a risotto is a new experience every time and I will never get bored to reinvent it again and again for you.
